Chicken Fajitas are my favourite and a quick go to dinner option for a busy week night. This can be made in about 15-20 minutes when you have all the ingredients on hand and few flour/corn tortillas or even a chapathi works fine for this.
When I first started making these, I used to rely on Old El Paso fajita spice mix, which by the way gives a great flavour. But I wanted to make my own spice mix and after a quick search I came across Jamie Olivers easy chicken fajita recipe. Based on his recipe I made my own spice mix with a few extra ingredients.
In this recipe I have marinated the chicken for about 1 hour. You can skip the waiting period and proceed with the marinated chicken. Make some salsa, shred some lettuce/cabbage, spoon it on a tortilla along with the chicken and you have a yummy dinner/lunch/snack or even breakfast. This works as an awesome party food. Instead of using just plain tomato salsa, you can also use a pineapple salsa, sour cream or guacamole to amp up the flavour and taste.
Lets make the fajitas, shall we now?
INGREDIENTS
Serves – 8
- Chicken breast – 3 medium size, sliced into strips
- Paprika – ½ tsp
- Pepper powder – ½ tsp
- Lime juice – 1tbsp
- Salt – to taste
- Red pepper – ½ medium, sliced
- Yellow pepper – ½ medium, sliced
- Onion – 1 , sliced
- Tortillas – 8
Fajita Spice Mix
- Cumin powder – 2tsp
- Paprika – 1.5 tsp.
- Pepper powder – 1 tsp
- Salt – 1tsp
- Onion powder (optional) – ½ tsp
- Garlic powder(optional) – ½ tsp
- Oregano – ½ tsp
Tomato Salsa
- Tomato – 3 large, finely chopped
- Onion – 1 large, finely chopped
- Green chilli – 2, finely chopped,
- Coriander – ½ bunch, finely chopped
- Garlic – 2 cloves, finely chopped
- Lime juice- 3 tbsp
- Salt – to taste
METHOD

1. Prepare the spice mix powder by mixing together the ingredients listed under fajita spice mix.

2. Marinate the chicken with paprika, pepper powder, salt and lime juice for about 1 hour.

3. Heat some oil in a pan. Add in the marinated chicken and fry till the chicken is cooked and starts browning.

4. Add in the sliced peppers and onion. Mix and cook for 2 minutes.

5. Finally add the fajita spice mix, check for salt and fry for about 30-45 seconds. Take off the flame.

6. Mix all the ingredients listed for tomato salsa.

7. Take a tortilla and fill it with the chicken, salsa and lettuce and serve.
NOTES
- If you don’t have time to marinate for 1 hour, simply mix the sliced chicken with marinade and fry immediately.
- Double or triple the quantity of ingredients listed under spice mix and store in an air tight glass container for future use.
- Season the tomato salsa just before serving in order avoid it leaving out excess moisture.
