Badam Halwa ( Almond Pudding)

Badam halwa is a rich ,flavourful and delicious Indian sweet. It is made with blanched almonds/almond powder, milk, ghee, sugar and saffron which contributes to the beautiful yellow colour of the halwa.Badam halwa is made during festivals, wedding occasions and nowadays is widely available across many restaurants.

Traditionally its made by soaking and peeling the almond and grinding with milk but nowadays almond meal is easily available. I have tried making the halwa using both the methods and there was no difference in the taste.

Let’s check out the recipe, shall we?

INGREDIENTS

Serves – 5-6

  • Almond meal/powder – 1 cup
  • Milk – ½ cup
  • Sugar – ½ cup
  • Ghee – 2-3 tbsp
  • Saffron – few strands soaked in warm milk
  • Cardamom – 3

METHOD

1. Take the almond powder and milk in a kadai/pan.

2. Mix it using a whisk to avoid any lumps.

3. Switch on the flame and start mixing. Add the soaked saffron along with the milk at this stage.

4. Keep stirring and cooking. Powder the cardamom and sugar together.

5. When the mixture thickens, add the powdered sugar and cardamom. Mix well.

6. Keep stirring. When the mixture loosens up and turns a bit watery add the ghee. Keep stirring.

7. When the mixture thickens and starts to come together without sticking to the sides of the pan and oozes ghee, take off the flame.

8. Serve hot or warm or even cold.

NOTES

  1. If you don’t have access to almond powder, soak almonds in hot water for about 10 minutes and peel. Grind the almonds with milk and follow as per the above recipe.
  2. Adding saffron in the beginning gives a good colour.
  3. Don’t be stingy with the ghee.
