Zucchini Fritters

It certainly feels good to be back. It’s been days rather months since I posted a recipe here. I did make a lot of things, but didn’t have the patience to click pictures and write a post attributing to my very active toddler and the lock down.

3 months later and the very active toddler is back in school, I have a solid 3 hours before he gets home. The recipe I am posting is of zucchini fritters, that I made as an after school snack for my kid. So simple, easy to make and so good as well, that the kid who came back from his school finished it in minutes (once in a blue moon thing in my house).

Let’s make these fritters now shall we?

INGREDIENTS

Serves – 2-3

  • Zucchini – 2 medium, grated
  • Green chilli – 2, finely chopped ( depending on one’s spice level)
  • Onion – 1 small, finely chopped
  • Ginger Garlic paste – ½ tsp
  • Red chilli powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Pepper powder – ½ tsp
  • Gram flour – ¼ cup
  • Rice flour – 1 – 1.5 tbsp
  • Salt – to taste
  • Oil – for frying

METHOD

1. Take grated zucchini in a bowl and add some salt and mix well.

2. Add the finely chopped green chilli.

3. Also add the finely chopped onions and ginger garlic paste.

4. Add the red chilli powder, turmeric powder and pepper powder.

5. Also add the gram flour and rice flour.

6. Mix well without adding any water. The zucchini will leave water which is more than enough for this recipe.

7. Heat oil in a pan to shallow fry. Once the oil is hot enough, drop the fritters in small batches.

8. Turn over in 2 minutes and let the fritters cook on a low flame till both the sides are golden in color and cooked well.

9. Drain on a paper towel and serve hot with sides of your choice.

NOTES

  1. This recipe doesn’t require water, since zucchini is a vegetable with high water content and tends to leave water when salt is added to it.
  2. If the whole mixture is too watery and you are not able to drop it properly in oil, add some more rice flour and mix well.
  3. Adjust the amount of chillies and spice powder to adjust your family’s spice level. My son likes some heat in his food, hence the above measurements.
  4. This can also be baked. To bake add 1 tbsp oil to the whole mix and portion it out on a tray. Preheat the oven and bake at 190°C for 20-25 minutes or till done.
