Green Apple and Citrus salad with honey peanut dressing

A simple and easy no cook recipe that comes together under 30 minutes for a light and refreshing lunch, snack or dinner. What more? Serve it with some chicken on the side to make a nutritious or wholesome lunch or dinner any time of the year.

Let’s make the salad now shall we?

INGREDIENTS

Serves – 2-3

  • Green Apple – 1, sliced thin
  • Orange – ½ , sliced thin segments
  • Cucumber – ½ , thinly sliced
  • Carrot – ½, thin ribbons
  • Pomegranate pearls – ¼ cup
  • Almonds – 5-6, toasted and slightly crushed ( optional)
  • Lettuce – ¾ cup, thinly shredded
  • Honey – 1 tbsp
  • Lemon juice – 1 tbsp
  • Salt – to taste
  • Chilli flakes – 1 tsp
  • Crunchy peanut butter – 2 tbsp

METHOD

1. Take all the sliced ingredients in a salad bowl.

2. Blend together honey, lemon juice, salt and peanut butter using a blender or a whisk. Check for salt and add the chilli flakes and mix well.

3.Add the dressing over the salad before serving and mix well. Top it off with the toasted and crushed almonds and serve.

NOTES

1. Almonds are completely optional. They can be replaced with sunflowers seeds, pumpkin seeds, walnuts, croutons, pecans or pistachios.

2. Dried cranberry or golden berries can be added instead of the pomegranate pearls.

3. The salad ingredients can be prepared and stored in the refrigerator until serving time along with the dressing
