A quick and simple baked spicy chicken drumstick , that will be a family favourite for any day of the week. These chicken drumsticks can either be baked in oven or cooked on stovetop.
Marinated with simple spices for about 30 minutes, this recipe will give you the most soft and juicy chicken.

INGREDIENTS
Serves 6-8
- Chicken drumsticks – 1 kg, skin off
- Lime juice – 3 tbsp
- Kashmiri chilli powder – 1.5 tsp
- Black pepper powder – 1.5 tsp
- Ginger Garlic paste – 2 tsp
- Stock cube ( optional) – ½ cube
- Onion powder – ½ tsp
- Greek yoghurt – 1.5 tsp
- Oil – 2 tbsp
- Salt – to taste
METHOD

1. Clean the chicken drumsticks and make deep slashes on the flesh.

2. Mix the rest of the ingredients except the oil to make a thick paste.

3. Add the chicken to this paste and cover it completely with the marinade. Keep the chicken covered in the refrigerator for about 30 minutes or preferably overnight.

4. Preheat oven to 200°C. Take out the chicken and mix it with the oil. Layer the chicken on the baking tray and bake for about 20-25 minutes turning halfway through. Cook till the top is crisp and the juices run clear.

5. Serve hot with some lime wedges.
NOTES
- Adding stock cube to the marinade is optional, but trust me it makes a huge difference.
- If adding stock cube make the marinade, check and then adjust for salt.
- Making slashes on the chicken will ensure better marination and better flavour.
