Egg puff is one of the snack item that is always available in any local Indian bakeries and the best ones I have tasted came from the bakeries in Bangalore. Hard boiled eggs and spicy onion masala are wrapped in puff pastry sheet squares and baked until they are golden and flaky.
Back home we used to buy this puffs from a bakery in our locality. They used to taste good initially but the amount of onion filling decreased with each passing day. After sometime, we completely stopped buying those puffs.
When we shifted to London, I came across these puff pastry sheets during my weekly trip to the superstore. I got the puff pastry roll and immediately made the puffs. Initially I made the veg puffs just to check. And when I got a good result I moved on to egg puffs. Tried with a simple onion masala and voila I exactly got exactly bakery taste in the puffs.
So let’s not waste our time. Shall we start baking these egg puffs?
INGREDIENTS
Serves – 6
- Hard Boiled eggs – 3, halved
- Onion – 2 medium, thinly sliced
- Ginger Garlic paste – 1 tsp
- Red chilli powder – 1 tsp
- Pepper powder – ½ tsp
- Garam masala – ½ tsp
- Salt- to taste
- Oil – 2 tbsp
- Egg – 1, beaten for egg wash
METHOD

1. Heat oil in a pan and add in the thinly sliced onions. Sauté them on low flame.

2. When they turn soft add in the ginger garlic paste and fry for about 1 minute.

3. Add in the red chilli powder, pepper powder, garam masala, salt and mix well.

4. Let cook on a medium flame till the onions are caramelised. Let it cool.

5. Cut the pastry sheet into 6 squares. Take one square and spread 1 tsp of the onion masala in the centre of the square.

6. Place the halved egg, yolk side down on top of the spread onion masala.

7. Take some more onion masala and spread on top of the egg. Apply egg wash on the edges.
8. Bring in all 4 corners of the pastry square toward the centre to make a wrap. Similarly do so with the rest of the pastry squares.

9.Brush them with an egg wash and bake in a 200° preheated oven for about 20-25 minutes.

10.Enjoy them hot with a cup of coffee or tea.
NOTES
- If using frozen puff pastry sheets, let them thaw on the counter for about 1 hour or in the refrigerator overnight.
- Let the onion mixture cool down completely , before you start assembling the puffs.
- You can replace the garam masala with coriander powder.
- If the onion masala looks too dry, add in 2 tbsp water, mix well and cook.
