Mixed Lentil Dosa ( Adai) is a protein packed breakfast dish made using spices, mixed lentils and grains. The recipe for this savoury Indian pancake varies from one household to another. Also the proportion and types of lentils and spices can be varied as per one’s liking and taste.
Let’s see how to make this dosa ( adai).
INGREDIENTS
To soak
- Moong dal ( Split mung beans) – 1/4 cup
- Chana dal ( Split chickpeas) – 1/4 cup
- Rice – 1/4 cup
- Corn – 2 tbsp
- Jowar ( Sorghum) – 1/4 cup
- Ragi ( Finger millet) – 1/4 cup
- Urad Dal ( Black gram) – 1/4 cup
- Water – As required
To Grind
- Red Chillies – 4 – 5
- Garlic ( whole with skin) – 4 pods
- Whole balck pepper – 1 tsp
- Fennel seeds – 2 tsp
- Asafoetida – 1/4 tsp
- Salt – to taste
To make dosa
- Onion – 1, finely chopped ( optional)
- Moringa leaves/ Fenugreek leaves/ Dill leaves- 1 handful ( optional)
- Mixed veggies – 1 cup ( finely chopped)
- Oil – as required
METHOD

- Measure and wash all the ingredients given under the ‘to soak’ list.

2. Soak it in sufficient water overnight or for 3-4 hours.

3. Grind the soaked lentils along with the ingredients given in ‘ to grind’ list to a coarse paste adding sufficient water.

4. Mix well and check for salt and water. The batter should not be too thick nor too thin. It should be of spreadable consistency. At this stage you can add the extra add-ons like onion/ moringa leaves/fenugreek leaves.

5. Heat a non stick or cast iron pan and pour a ladleful of the prepared batter on the pan and spread slowly in a circular motion as per one’s liking. Add oil around the dosa some in the centre of the dosa.

6. Cook on a medium flame till one side gets a good golden brown colour. Flip and cook for about 3-4 minutes on medium flame.

7. Serve hot with a some chutney/ sugar/powdered jaggery.
NOTES
- Adding the onions, vegetables or greens while making the dosa is completely optional. However adding them gives an extra taste to these dosa ( savoury pancakes).
- One can always play around with different lentils and grains to be added to make this dosa , optional being garbanzo beans, black chickpeas, whole mung beans, black rice, cowpeas , millets, quinoa etc.
- Always cook the dosa on low-medium flame to ensure proper cooking of the lentils.
