What better way to start the day than, have this banana bread for breakfast? Overripe bananas along with few other ingredients are converted into a yummy loaf of banana bread in under an hour or so. This one bowl recipe is definitely a keeper, atleast for me. Let me know how that works out for you as well.

INGREDIENTS
Serves – Makes 1 loaf/10-12 slices
- Banana – 3 large, mashed/ 1 cup mashed.
- Eggs – 2, large
- Neutral Oil – 1/2 cup
- Vanilla essence – 1 tsp
- Skimmed Milk – 1/3 cup
- Coconut sugar – 2/3 cup
- Cinnamon powder – 1 tsp
- Whole wheat flour / All purpose flour – 1 3/4 cup
- Baking soda – 1 tsp
- Baking powder – 1 tsp
- Salt – 1/2 tsp
METHOD

- Preheat oven to 180°C. Take mashed banana in a bowl.

2. Add 2 eggs.

3. Add oil, cinnamon powder, vanilla essence, skimmed milk and mix well till incorporated .

4. Add coconut sugar and mix well.

5. Sift the flour, baking soda, baking powder and salt in the wet mix. Fold the dry ingredients into the wet mix.

6. Grease a loaf tin and line with a baking paper. Pour the mix into the tin. Bake for 50-60 minutes or till a toothpick inserted in the centre of the cake comes out clean.

7. Slice into it and have with your cup of tea for your breakfast. Warm up the bread and apply some butter before eating it.
NOTES
- To make the cake eggless, add in 1/2 cup youghurt.
- You can freeze the banana bread by slicing them and paking in ziplock bags. Freeze them upto 2 months.
- Substitute coconut sugar with regular granulated sugar.
